As soon as fall arrives, I’m ready for soup. Some soups are quick and easy, others can be made with minimal effort in the slow cooker, and then there are soups like this one. They take a little more time to prepare, but I still see it as a win, because this recipes make a ton and the soup freezes well. A few weeks ago, I made a double batch of this tomato soup and friends brought over fixings for creative grilled cheese sandwiches. White cheddar and green apple? Delicious! Shallots and sharp cheddar? Yum! Grilled cheese may not be the healthiest of foods, but it sure beats a lot of options for weekend game night foods. We stood around the kitchen and dipped grilled cheese sandwiches, hot off the pan, into small bowls of this delicious soup. Several years ago I made this Curried Coconut Chicken Salad recipe and accidentally didn’t follow the directions. (Recipes with divided ingredients get me, because I’m in too much of a rush when cooking dinner mid-week.) Even with my mistakes and alterations, it turned out really well! Over the last few years I’ve continued to make a few changes and it’s become a go-to quick recipe at our house. When I make it doesn’t have a dressing; it’s more of chicken salad that you can serve over greens or use to make a sandwich.
