This Squash Quinoa Bowl with Creamy Cashew Sauce has been on a regular rotation the past few months and without fail colleagues comment on my lunch: “Your lunch is beautiful!” “That looks so healthy and delicious!” “What a fancy lunch!” They are right. This Squash Quinoa Bowl with Creamy Cashew Sauce it beautiful. It is healthy. It is delicious! And it looks like a fancy lunch, but it doesn’t take a lot of time to prepare. I spent 25 minutes on Sunday making lunch for the week. And it makes me happy. It reminds me of our trip to Seattle last summer. I love books and usually try to find a unique bookstore to visit when I travel. Imagine my joy when I stumbled on the Book Larder. Not only is it a bookstore, but it’s a bookstore with only cookbooks and other food books. Don’t do what I did….

Easy Slow Cooker Spiced Applesauce

By | Make Ahead, Quick and Easy, Recipes, Snacks | No Comments

This slow cooker spiced applesauce makes me happy. I’ve made it a few times this fall and winter and it disappears quickly. My husband and I find ourselves dipping into the applesauce for an after dinner dessert. Unlike many jarred applesauce this one is sweetened purely by the apples. The first time I experimented with making slow cooker applesauce is when I brought home a bunch of apples I bought at the grocery on sale. They were beautiful, but when I cut into them not so beautiful… BUT they weren’t bad apples. They were just destined for other greatness! This applesauce is the perfect way to use apples that might be a little discolored, mealy, or otherwise not appetizing. And it’s easy. Seriously easy. Don’t be intimidated by the slow cooker time. It takes very little hands on time to make slow cooker applesauce. Plus, while it’s cooking in the…

Spicy Curried Chicken Salad

Several years ago I made this Curried Coconut Chicken Salad recipe and accidentally didn’t follow the directions. (Recipes with divided ingredients get me, because I’m in too much of a rush when cooking dinner mid-week.) Even with my mistakes and alterations, it turned out really well! Over the last few years I’ve continued to make a few changes and it’s become a go-to quick recipe at our house. When I make it doesn’t have a dressing; it’s more of chicken salad that you can serve over greens or use to make a sandwich. This comes together really quickly and is even better the second day, so make a chicken or buy a rotisserie chicken and eat some of the meat tonight and then make this Spicy Curried Chicken Salad for tomorrow’s lunch or dinner. In order to keep the mixed greens from getting soggy in a packed lunch, put the…

Ginger Salmon and Green Bean Sheet Pan Meal

By | Dinner, Quick and Easy, Recipes | One Comment

I meal plan each week, but sometimes we run out of food before the week is up. Maybe we had planned to go out to dinner and didn’t or we had friends join us for dinner when we didn’t expect it. It tends to creep up on me. In the morning while I’m making breakfast, I look in the fridge and have the realization that I don’t have anything to make for dinner. This is one of the recipes I turn to when I need to pick up the ingredients after work, make the meal, and still eat dinner at a reasonable hour. It has a marinade, but don’t let that stump you. It’s a quick marinade that still adds a lot of flavor. This recipe is also great if you’ve fallen into a pattern of making salmon the same way or if you are not sure how to cook…
